Kent Kaffe Laboratorium Finca Ceylan, Guatemala

This is a coffee I found when visiting Copenhagen last weekend. I had a few tips for coffee shops and ran into a former Swedish guy who had moved to Copenhagen to his Danish wife where he now ran a coffee shop. Since he made me nice cup of coffee I decided to buy a bag to take home and try (oh and also, I'm curiuos, ferrets you know).

As usual I did one two minutes and one four minutes brew in french press. The coffee is 7 days old and a medium roast. Water 90 degrees Celsius.

2 minutes: It reminds me of Johan & Nyström and da Matteo at the same time. It has an earthy touch to it's taste that I associate with many Johan & Nyström but also a milder and with some sweet fruitiness that to me is more of da Matteo's beans. The aftertaste is giving hints of smoke, tobacco and leather in the same way that some chocolate do.

4 minutes: Leaving the coffe longer before pressing down the filter gave better balance between the slightly edgier earty taste and the sweeter fruitier taste and the taste overall became more complex and interesting.

The coffee wasn't bad when it started to cool down and might be worth a try for cold brewing.
